Changes Part Two

The second change in the household is I have decided to quit E-Mealz. Sad, I know, but Alex usually works at nights, so the only time we get to eat a meal together is on weekends. Why pay for five meals pre-planned for you that I eat alone? Also, I have been subscribing fr a year and a half, so now I’m getting repeats, which is fine, only the quality seems to have decreased.

Here is the new plan! I downloaded a recipe manager for my computer from It took a few hours to fill up the database. It comes with a few recipes when you download it, but then I added my own that I have in a recipe filer. It’s so nice having it on the computer because I can keep track of when the last time I fixed a certain recipe.The neatest feature is I can see what I have in my pantry (corn, navy beans, and bisquick) and look up recipes by ingredients, so I’mnot stuck with the same 2 year old can of navy beans I’ve never fixed! I find out Alex’s schedule to determine how many meals we will be eating together. Then I set up a schedule for our household. For example, for some strange reason, we get to eat lunch together on Sunday and then Saturday, and eat dinner together monday through friday! Here is what I did:

Sunday (soup/salad): Breakfast (toast, eggs and OJ), lunch (Bean and Pasta Soup with Salad and dinner rolls)
Monday (Mexican): dinner (Chicken and Rice Taco Fiesta with Tortilla Chips and Salsa)
Tuesday (Italian): dinner (Florentine Chicken with fettucine and Caesar Salad)
Wednesday (Asian): dinner (Steamed wonton purses with fried rice and fortune cookies)
Thursday (Kroger Meal Deal): dinner (Hot Dogs with chocolate pudding and apple wedges)
Friday (Hearty): dinner (Maple-Glazed Chicken with garlic mashed potatoes and green beans)
Saturday (paninis): breakfast (toast, eggs and oj), lunch (Proscuitto and Blue Cheese Panini)

If you want to start following my menu’s, I will post the recipes:
1. Bean and Pasta Soup with Salad and dinner rolls:
-1 oz bacon bits
-2 chopped carrots
-2 minced garlic cloves
-1/2 t rosemary
-1 T tomato paste
-30 oz navy or cannellini beans
-4 c chicken broth
-3/4 c tubetti or ditalini pasta
-1/4 c chopped parsley

Cook bacon bits and carrots for 5 min on stove
Add garlic and rosemary and cook 1 min
Season with s&p
Stir in tomato paste, beans, broth and 4 c water
Reduce heat and simmer partially covered for 10 min
mash beans in pot to thicken soup
add pasta and cook 10 min
sprinkle with parsley
Serve with salad and hot dinner rolls!

2. Chicken and Rice Taco Fiesta with Tortilla Chips and Salsa:
3/4 lb cubed chicken breast
14 oz can chicken broth
8 oz can tomato sauce
1 pkt taco seasoning mix
14 oz can corn, drained
1 1/2 c uncooked minute rice
1 bag tortilla chips
8 oz shredded cheddar

Saute chicken
Add broth, sauce, and taco seasoning
Cover and simmer 5 minutes
Add corn and rice
Cover, remove from heat, stand 5 minutes
Fluff and serve on crunched tortilla chips
top with cheese
Serve with tortilla chips and salsa

3. Florentine Chicken with Italian Breadsticks and Caesar Salad
9 oz creamed spinach
1 can crescent rolls
1 deli roasted chicken
4 oz can sliced mushrooms, drained
1 c shredded cheese
8 oz fettucine noodles
alfredo sauce

Preheat oven to crescent directions.
Heat creamed spinach in microwave.
Spread 1/2 can crescent in bottom of 8×8, sealing seams.
Top with chicken, then spinach, mushrooms, then cheese.
Top with other 1/2 crescents, sealing seams.
Bake according to directions.
Boil fettucine, drain.
Serve with fettucine alfredo and Caesar salad

4. Steamed Wonton Purses with Fried Rice
1/2 lb ground turkey
1 egg
2 T soy sauce
1 1/2 T Asian Seasoning Mix
1 T plain dry bread crumbs
1 garlic clove, pressed
16 square wontons
1/4 c rice vinegar
2 T soy sauce
1 T Asian Seasoning Mix
1 garlic clove, pressed
Fried Rice:
3 Tbl oil, divided
2 eggs, beaten
1 cup bean sprouts
3 cups cooked long-grain rice
2 Tbl soy sauce
1/2 c shredded carrot
1/4 t ginger
1/8 t pepper
1 minced garlic clove
3/4 c sweet peas

Combine turkey, egg, soy sauce, seasoning mix, bread crumbs, and garlic pressed.
Place wonton skins on cutting board.
Place a scoop of turkey mixture onto each wonton.
Lightly brush outer edges with water.
Bring corners of each wonton up toward center.
Pinch corners to seal and place in steamer.
Boil 3 cups of water in skillet.
Reuce heat ot simmer and place steamer into skillet. Cover.
Cook wontons 5-7 minutes.
For sauce, combine ingredients and mix well.
Carefully transfer wontons to serving platter using tongs.
Serve with tongs.
For rice:
Heat 1 Tbl oil in wok with carrot, ginger and garlic.
Stir in rice and soy sauce and cook over low heat 5 minutes.
Transfer rice and add eggs and pepper in wok.
Scramble eggs.
Remove and set aside.
Add bean sprouts and peas. Stir fry about 1 minute.
Add rice and continue sauteing until rice is hot, turning temperature down if necessary.

5. Hot Dogs with pudding and fruit
Nathan’s Hot Dogs 16 oz Package
Kroger Hot Dog Buns 8 ct Package
Country Fresh Diced Onions 8 oz Package
Kroger Yellow Mustard, 10.5 oz
Hunt’s Snack Pack Pudding 4 Pack
1 apple

Boil weenies
Insert a weenie in each hot dog bun
Top with preferred condiments
Serve with chocolate pudding and apple wedges

6. Maple-Glazed Chicken with Garlic Mashed Potatoes and green beans:
instant mashed potatoes
1/2 lb chicken breast
1 t steak grilling seasoning
1 T butter
1/8 c maple syrup
can of green beans

Lightly coat chicken with grilling seasoning.
Heat butter in skillet over med-high.
Add chicken,cook 5-6 minutes.
Remove from skillet, add maple to skillet and cook 2 minutes
Drizzle syrup on top.
Make mashed potatoes according to box.
Add in garlic to taste.
Serve chicken with warm green beans and mashed potatoes.

7. Prosciutto and Blue Cheese Panini
1 Baguette, cut in quarters and sliced
1/4 c extra virgin olive oil
10 oz thinly sliced prosciutto
1 bosc pear, thinly sliced
1/4 c honey
4 oz blue cheese

Lightly toast bread
Brush inside with olive oil
Line with prosciutto slices
cover with pear slices
Brush pear with honey
season with pepper
Top with Basil
Sprinkle cheese

I’m still new at this, so I will go shopping tomorrow for all the ingredients needed to make these meals. I hope it works out!
