Our menu this week:
1. Crazy Meal Deal
Cook beef tips in oven for 20 minutes.
Microwave mac and cheese for 5 minutes.
Serve with caeser salad, soda and hawaiian rolls.

2. Marinated Pork

I’m using left-over frozen marinated pork.
Cook in over for 30 minutes.
Serve with mashed potatoes and corn. Yum!

3. Burgundy Chicken

2 T butter
4 chicken legs
1 shallot, finely chopped
2 T marc de Bourgogne or brandy
1 c white Burgundy or other Chardonnay wine
2 thyme sprigs
salt and pepper
8 oz seedless green grapes, halved
1/4 c creme de fraiche or whipping cream
parsley and thyme sprigs, to garnish

Melt butter in heavy Dutch oven, add chicken and cook until browned all over.
Remove and drain on paper towels.
Add shallot to pan and cook, stirring occassionally, 2 to 3 minutes or until soft.
Return chicken to pan.
Add marc de Bourgogne and set alight.
When flames have died down, add wine, thyme, salt and pepper.
Bring to a boil, reduce heat, cover and simmer, turning chicken two or three times, 50-60 minutes.
Transfer chicken to warmed serving plates and keep warm.
Add grapes to pan and boil until sauce is slightly thickened.
Stir in creme fraiche and simmer to thicken slightly.
Pour over chicken, garnish with parsley and thyme and serve with peas.

4. Chicken Alfredo and Rice Casserole

10 oz alfredo
1/2 c milk
2 1/2 c cooked rice
2 c cubed cooked chicken
1 c frozen peas
1/3 c chopped bottled roasted red sweet peppers
1/4 c toasted slivered almonds
1/2 t basil
1c soft bread crumbs
1 T butter

Preheat oven to 350
combine alfredo and milk
Stir in rice, chicken, peas, peppers, nuts, and basil
Bake uncovered 30 minutes.
Uncover and stir.
Combine Bread and butter
Sprinkle on casserole
Bake uncovered 20 minutes.
