This week’s grocery stuff

One stop shop today! Hooray! Alex came with me begrudgingly to Kroger last night. I let him buy weird cheese and it lifted his spirits. He indicated he gets grumpy because I don’t let him buy the things he wants to: like chocolate chips, egg nog, or weird cheese…

Anyway, we ended up having fun together and spent too much money (he’s my weakness).

Total before my coupons: $96.60
Total Spent: $58.97
Total Saved through coupons and sales: $37.63

Here’s the free goodies:


I bought the crazy meal deal (5lb ground chuck for $9.76, and received the following for free: Tomato Sauce, Texmati Rice, Chili Seasoning, Diced Onions, and a Baguette)
Glade Scented Oil refill (used a buy 2 get one free coupon)
Halls Cough Drops (on sale for .97, used a .35 off coupon, which was tripled).

This week’s menu:
1. Apricot Chicken (serves 2)

1 lb boneless chicken tenderloins
3/4 c apricot preserves (Smucker’s Apricot Preserves 2.69, use a $1/2 coupon)
1/2 pkt onion soup mix
(1/8 c mayo)

Combine preserves, onion soup mix, and
mayo. Place chicken in 8×8 and spread mixture
over top. Bake @350 for 45 min, uncovered. Serve over steamed rice.

2. Molasses Pork Tenderloin

( 1/4 c molasses, 1/8 c coarse-grained Dijon
mustard, 1 T white vinegar, & 1/2 t salt)
1 to 2 lb pork tenderloin

Combine first 4 ingredients; brush half of
mixture over pork. Cover and chill 8 hours.
Chill remaining glaze. Bake @350, 45 min, or
until internal temperature reaches 160
degrees. Turn once during cooking & baste
with reserved glaze.

3. POrk Chops and Creamy Potatoes

1 T oil
4 boneless pork chops
1 can condensed cream of celery soup (.89 at Kroger)
1/2 c sour cream
salt and pepper
20oz pk frozen hash browns, thawed
1 1/2 c sharp cheddar cheese, grated and divided
2.8oz can french-fried onions, divided (1.59)

Preheat oven to 350 degrees. Heat oil in a large, nonstick skillet over medium-high heat. Add pork chops and cook about 5 minutes per side. Remove from skillet and drain on paper towels.
In a large bowl, mix together soup, milk, sour cream, salt, and pepper to taste. Stir in potatoes, 3/4 cup cheese and 1/3 can of onions. Mix together and spread mixture in the bottom of a 9x13x2 inch baking dish or pan, which has been lightly sprayed with nonstick cooking spray. Arrange pork chops over potato mixture.
Cover dish and bake for about 40 minutes. Remove cover, and top with remaining cheese and onions, and bake uncovered for and additional 5 minutes.

4. Bacon Cobb Pitas

2 hard boiled eggs, sliced (1.29)
1 pkg ready to eat bacon (1.79)
pita bread (2.49)
1/4 lb shaved ham and/or turkey, shredded (3.79)
1/2 cucumber, sliced thin (.55)
shredded cheddar
ranch dressing

Fry bacon to desired doneness/crispiness.
Cut pitas in half; add bacon, sliced eggs, ham, turkey, cucumbers, cheese and dressing.

5. Baked Ravioli

1 lb pkg frozen ravioli (I bought Buitoni in the refrigerated section, 3.49 and then used $1 off coupon)
26 oz spaghetti sauce

Arrange ravioli in 13×9. Pour spaghetti sauce
evenly over shells. Cover tightly with foil. Bake
@350, 50 min. Serve with garlic bread

6. Gyro Burgers

1/2 lb ground beef (5 lb ground chuck for $9.79)
2 t greek seasoning
2 pita rounds
iceburg lettuce leaves
1 roma tomato, sliced thin
feta cheese (3.99)
4 oz cream cheese (1.00)
1/2 t onion powder
1 T butter buds
1/2 c milk
1/4 t salt

1. COmbine cream cheese, onion powder, butter buds, milk and salt in sauce pan on low.
2. Shape beef and greek seasoning into two thin patties.
3. Grill or pan fry until done
4. Fill each pita with lettuce, tomato, and burger
5. Drizzle with sauce.
6. Sprinkle with feta.
