Monday: Tacos with Mexican Rice and Pear-Halves (like mom always made…)

1/2 lb ground beef
1 pkt taco seasoning mix
taco shells

1. Brown ground beef.
2. Drain.
3. Stir in seasoning and 1 c water.
4. Place in shells.

Tuesday: Baked Sausage Ziti with Salad and Breadsticks

1 lb. of ziti noodles
1 lb. of Italian rope style sausage
28 oz. of spaghetti sauce
15 oz. ricotta cheese
4 oz. shredded mozzarella cheese
2 oz. shredded Parmesan cheese
1/2 onion, chopped

Cook the ziti noodles. While they are cooking, brown the sausage slightly, then slice into thin slices. Cook the sliced sausage with the onion until the sausage is cooked through and the onion is tender. When the noodles are done, drain and mix with ricotta cheese, some of the mozzarella, and the sausage and onions. Cover the bottom of a 13 X 9 pan with sauce, then add the ziti mixture. cover with sauce and sprinkle remaining cheeses. Cover and bake for 45 min at 400°.

Wednesday: PepperSteak and Fried Rice

1 c beef broth
1/4 c hoisin sauce
1 T cornstarch
3 T ketchup
1 T rice vinegar
1/2 t worcestershire
1/2 t pepper
1 T oil
1 lb beef flank or top sirloin, thinly sliced

1. Combine broth, hoisin, cornstarch, ketchup, vinegar, worcestershire, and pepper
2. Heat oil in skillet
3. Add beef and stir 3 minutes
4. Add cornstarch mixture
5. Stir 3 minutes

Thursday: Beef Stroganoff with Mushrooms and white rice

1 lb. trimmed beef tenderloin, sliced 1/4-inch thick
1/4 c. butter (1/2 stick)
6 oz. mushrooms, sliced (about 2 c.)
1/2 c. chopped onion
1 can condensed beef broth
1 c. dairy sour cream
2 1/2 T. enriched flour

Cut meat in strips, 1/4-inch wide. Brown quickly in butter. Push meat to one side; add mushrooms and onion; cook just till tender. Add broth; heat just to boiling. Blend sour cream and flour; stir into broth. Cook and stir until mixture thickens (sauce will be thin). Season to taste. Serve over yellow rice or buttered noodles. Yields 4 or 5 servings.

Friday: Hamburger Macaroni Casserole with sesame green beans

1 1/2 lb. hamburger
1/4 c. chopped onion
1 c. sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 c. cooked elbow macaroni
1 can whole kernel corn, drained
crushed potato chips

Brown hamburger with chopped onions. Mix all ingredients together in large bowl. Place in casserole dish. Top with crushed chips. Bake for 1 hour at 350°.

Saturday: Chicken and Dumplings with corn

2 chicken breasts
2 T vegetable oil
7 oz carrot sticks
3 cans chicken broth
1 t poultry seasoning
1/2 t salt
1/4 t pepper
flour
8 oz biscuit dough
10.5 oz condensed chicken gravy

Sunday: Beef Stew

2 lbs stew meat
2 onions-halfed
4 potatoes-quartered
8 carrots-sliced
6 stalks celery-cut
1 cup fresh mushrooms-sliced
1 tsp salt
1/2 tsp pepper
3 Tbsp tapioca
1 1/2 cups V-8 juice

Do not brown meat. Put in roaster. Mix all together. Sprinkle tapioca over mixture. Pour over all 1 1/2 cups V-8 juice. Put in over at 250 degrees for 5 hours. Serves about 8.
